Chili

Nothing beats a hearty chili on a cold day. This recipe started years ago when my Mom was doing a weight watchers diet. This recipe was advised on one of their lists and has evolved since then. It became a staple dinner growing up and my sister and I continue to use this recipe today.

This recipe is so simple that when my now husband was in university, he made this chili to bring to a potluck and, it was the hit dish of the event. If a college kid can put this together and impress a crowd, you know it’s simple!

Over the years, I have changed the recipe for the better and my changes have also been adopted and used by my family members. It is so versatile that the level of heat can be changed by the spiciness of the salsa and the taco seasoning. You can also swap out the beans to whichever you like and for a healthier version, change the beef to chicken. The original recipe called for ground chicken, an extra can of diced tomatoes and 2 cans of the 6-bean blend. But I changed the format to what it is today- because, well, I can, and I also think it made the recipe better! Choose toppings of your choice and serve with tortilla chips.

Chili

Yield: 6-8 servings

INGREDIENTS:
1 lb lean ground beef
1 onion, chopped
1 jar of salsa, use heat as preferred, I use medium
1 can of tomato sauce
1 can kidney beans
1 can navy beans
1 can corn
1 package taco seasoning
Sprinkle of garlic powder
Salt/pepper to taste

DIRECTIONS:
1. In a large pot, put about a tbsp of oil and the chopped onion.
2. Once the onions become translucent, add the beef and start separating into small chunks with a wooden spoon. Season beef with garlic powder, salt/pepper and the taco seasoning.
3. When the beef is mostly browned, add the rest of the ingredients, sauce, salsa, beans and corn.
4. Cover and simmer for an hour.
5. Serve in a bowl and top with fresh cilantro, avocado, lime and tortilla chips.

 

Note: You can alter the spice in the chili by adding a mild, medium or spicy salsa jar and choosing a mild or spicy taco seasoning.
