Turkey Cobb Salad
Everyone is always looking for a healthy salad. I like to create salads that are going to sustain through the afternoon, because my tummy always starts to grumble around 3-4pm, who else is with me? In order to prevent the loud afternoon grumbles, I need to pack protein into my salad.
This salad is loaded with roasted turkey, turkey bacon, eggs, avocado and tomatoes. A lot of protein! Smokey flavour from the turkey and turkey bacon, creaminess from the egg and avocado and acidity from the tomato. All topped with a tangy Dijon mustard vinaigrette. Trust me, this will attack those tummy grumbles.
So, gather up the ingredients and get chopping because this salad is worth gossiping about!
Turkey Cobb Salad
Yield: 2 servings
INGREDIENTS:
1 head romaine lettuce, chopped
2 eggs, hard boiled and quartered
5-10 cherry tomatoes, quartered
2-3 slices roasted deli turkey, chopped
2 pieces cooked turkey bacon, finely diced
1/2 avocado, sliced
1 green onion, chopped
Dijon Mustard Vinaigrette
1/4 cup olive oil
2-3 tbsp white vinegar
1 tbsp Dijon mustard
Sprinkle Italian seasoning
Salt/ pepper to taste
DIRECTIONS:
1. Assemble salad by placing lettuce on bottom and each topping in a line across the bowl. Scatter green onion on top.
2. Toss with dressing. Enjoy!
