Chicken Fajitas

 

Chicken Fajitas remind me of my Dad’s cooking. Most Sunday evenings, growing up, my Dad would make dinner. This was one of his go to meals and as a family, we all looked forward to Fajita Sunday. He would usually do a chicken and steak combo with all the fixings.

 

I started making this for my husband when we were first married, and it has also become a staple meal in our home. For one, it’s super easy! And secondly, it’s a delicious, one pan meal that everyone can customize to their liking. I usually stick to chicken as I prefer the flavour. I do occasionally add in the steak during the BBQ season when I know I can cook the steak properly on the grill.

 

My favourite way to eat this chicken fajita is with guacamole spread on the bottom of the tortilla, then the chicken and cooked veggies on top. Add fresh tomatoes, lettuce and salsa on top of that. Roll it up and you are ready to enjoy!

Chicken Fajitas

Yield: 4-6 servings

INGREDIENTS:
4 chicken breasts
Generous sprinkle each of:
Paprika
Chipotle chilli powder
Garlic powder
Salt
Pepper
Juice of 1 lime
1 red pepper, sliced
1 green pepper, sliced
1-2 packages sliced mushrooms
1/2 large red onion, sliced
2 tsp Italian seasoning
Fresh parsley or cilantro

DIRECTIONS:
1. In an oven safe pan, season both sides of the chicken breast with a generous sprinkle of paprika, chipotle chilli powder, garlic powder, salt and pepper. Squeeze the juice of half of a lime over the chicken before you season the second side and then flip and repeat.
2. At this point you can either grill the chicken or place it in a 350-degree oven for 30 minutes until juices run clear.
3. Meanwhile, sauté the mushrooms, onions and peppers in a pan with olive oil until soft. Season with Italian seasoning, salt and pepper.
4. When chicken is done, slice into strips and place into pan with the cooked veggies. Sprinkle fresh parsley/cilantro on top.
5. Serve with soft tortillas, guacamole, lettuce, tomatoes and salsa. Fold everything up into the tortilla shell and enjoy!
