Black Bean Taco Crunch Wrap
This recipe is life changing! It was so easy to assemble and so so so delicious, I craved it for days after eating it, luckily I made extra!
I got this idea from @rainbowplantlife. She had a YouTube video showing how she created this wrap. Her site is completely vegan and I ain’t no vegan, so I created a vegetarian/dairy version that suited my needs just fine. I also created my own delicious sauce and opted out of the nacho cheese sauce, as I hate that sauce on a good day.
Crunchy, gooey, tasty, spicy (if you prefer)… this is a whole meal in your hands. RUN TO THE STORE NOW!!!! This crunch wrap will have you gossiping for an eternity.
Black Bean Taco Crunch Wrap
Yield: 4 servings
INGREDIENTS:
5 large size flour tortillas
4 taco size corn (or flour) tortillas
1 can refried black beans, warmed
4 heaping tbsp of corn kernels
1 cup shredded lettuce
1 large tomato, small dice
4 tbsp shredded cheese
2 avocados, mashed
4 tsp salsa (spice of your choice)
1/2 cup sour cream
2-3 tbsp taco sauce (spice of your choice)
DIRECTIONS:
1. On a large baking tray, spray the 4 taco size tortillas with cooking spray. Bake at 350 for 10 minutes until crispy. Set aside.
2. In a small bowl, mix together sour cream and taco sauce until combined. Set aside.
3. Take one of the large tortillas and cut it into quarters. Set aside.
4. To assemble the crunch wraps. Place a large tortilla on the bottom. Spread 1/4 cup of the black bean mixture on the bottom. Put 1 tbsp of the corn kernels on top. Put 1/4 cup shredded lettuce on top. Place one of the crispy tortillas on top of the lettuce. Spread the 1/4 of mashed avocado on top of the crispy tortilla. Top with 1 tbsp of shredded cheese, 1 tsp salsa, 1 tbsp fresh tomatoes and 1-2 tbsp of the sour cream sauce.
5. To roll the crunch wraps. Take one of the extra quarters of tortilla and place in the middle. Wrap up the side of the large tortilla around the crispy one forming a hexagon-like shape.
6. In a frying pan greased with cooking spray, brown the taco wrap folded side down. Once browned, flip and do the same on the other side. Repeat with all the wraps. Enjoy!
