Huevos Rancheros

Continuing on with my husband’s birthday meal, I made him his favourite breakfast, huevos rancheros. This was super easy and fun to create!

I toasted up a tortilla and topped it with some black beans, a fried egg, avocado slices, feta, sour cream and parsley/cilantro. Sooooo easy and delicious.

These huevos rancheros are worth gossiping about!

Huevos Rancheros

Yield: 4 servings

INGREDIENTS:
4 tortillas
4 eggs
1 can black beans
1/2 red pepper, small dice
1/4 red onion, small dice
1/2 tsp chili powder
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/4 cup tomato sauce
Juice of 1/2 lime
1 tbsp parsley or cilantro, chopped
1 avocado, thinly sliced
4 tbsp feta, crumbled
Sour cream

DIRECTIONS:
1. In a large pan, saute the red pepper and onions until soft. Add in the chili powder, paprika, cumin and garlic powder. Cook another minute. Add in the black beans. Add in the tomato sauce and juice of half a lime. Using a potato masher, slightly mash the beans so that you have some smashed and some whole. Once mixed well together, remove from heat, stir in parsley/cilantro and set aside.
2. Meanwhile, in a small frying pan, bring it up to high heat and place a tortilla in the pan. Toast the tortilla until brown on both sides. Watch carefully so it doesn’t burn. Set aside.
3. Fry up 4 eggs separately, how you like it- soft/medium is best for this recipe.
4. To assemble the huevos rancheros, place a toasted tortilla on a plate. Top with 1/4 of the black bean mixture. Place the cooked egg on top. Add on sliced avocado, 1 tbsp crumbled feta and drizzle with sour cream. Sprinkle with additional parsley or cilantro. Repeat until all 4 servings are complete. Enjoy!
