Cookie Butter Rice Krispie Treats
Ok guys, I’m not going to lie. Since I discovered cookie butter, I am obsessed. I realize I’m a bit late to the cookie butter game- but there is no time like the present to get excited about a product and experiment.
I decided that as much as regular rice krispie treats are delicious, what if I mixed in the cookie butter and some crumbled lotus cookies and took these treats to the next level?! Well I am happy to report that the recipe worked and they were addictive, amazingly yummy and super easy to make.

Cookie Butter Rice Krispie Treats
Yield: 20 squares
INGREDIENTS:
4 tbsp butter
1 pkg marshmallows
1/2 cup cookie butter
1 tsp vanilla
5 cups rice krispies
10 lotus biscoff cookies, smashed into small pieces
DIRECTIONS:
1. Melt the butter and cookie butter in a large pot over medium-low heat.
2. Once melted, add the marshmallows. stir until they are mostly melted. Keep the temperature on low, that is the secret.
3. Stir in the vanilla.
4. Once everything is melted, take the pot off the heat and add in the rice krispies and half of the smashed cookies. Mix until everything is incorporated.
5. Pour the mixture into a greased 9x9 pan, and when cool enough, press down with your hands until equal. Take the remaining smashed cookies and push them on to the top of the rice krispie treats.
6. Let the mixture completely cool before cutting into squares. You can serve with extra cookie butter spread on top (to take it to another level). Enjoy!
