Cookie Butter Cookies
As I would scroll through my Instagram feed, I would constantly see recipes using cookie butter. Now, cookie butter must be an American thing because only recently have I been able to find it here in Canada- and it’s not the same. Lucky for me, I was in Florida over the holidays so I grabbed myself 2 jars of this so called ‘cookie butter’.
I found a super easy recipe by @smashedpeasandcarrots but, of course I had to add my own twist. I lessened the amount of oats and added in some rice crispies and chocolate- I don’t think anyone will complain.

Cookie Butter Cookies
Yield: 20 cookies
INGREDIENTS:
1 cup cookie butter (I used Lotus Biscoff brand)
3/4 cup rolled oats
1/4 cup rice crispies
1/4 cup mini chocolate chips
1 egg
DIRECTIONS:
1. Place 1 cup of cookie butter into a bowl, microwave it for 20 seconds just to slightly soften it.
2. Add the rest of the ingredients and mix together.
3. Using a teaspoon, scoop out some of the mixture and roll into balls. Place on a baking tray lined with a silicone mat. Press balls down slightly before placing in oven.
4. Bake at 350 degrees for 8 minutes. Cool on rack. Enjoy!
