Cookie Butter Blondies
I came across this dessert on Instagram. It was in the stories of a fellow food blogger, @soheilacorn. I screen shot that recipe right away, as I am always looking for ways to use cookie butter.
But, you know me, I couldn’t just leave that recipe as is. I took these blondies up a level. I placed the lotus biscoff cookies on the bottom of the pan before I placed the blondie batter on top. And then, once baked, I drizzled melted cookie butter over the blondies! I know!!!!
I am telling you, this is one of the best new desserts I have discovered in a long while. EVERYONE that tries them, falls in love. I am sharing this recipe below, and it is going to be one you will be sharing and gossiping about all year long!
Cookie Butter Blondies
Yield: 20 squares
INGREDIENTS:
1/2 cup vegetable oil
2 tsp vanilla
1 cup cookie butter + 2 tbsp for drizzling
1 1/2 cup brown sugar
1 1/4 cup flour
1 tsp baking powder
15 lotus biscoff cookies
DIRECTIONS:
1. In a large bowl, mix all the ingredients together leaving out the cookies and the extra 2 tbsp of cookie butter.
2. In the bottom of a greased and lined square baking pan place the cookies in a single layer.
3. Top with the entire batter. Smooth out evenly.
4. Bake at 350 degrees for about 30 minutes. Let fully cool.
5. In a microwave safe bowl, place 2 tbsp of the cookie butter. Microwave for 30 seconds. Mix well and drizzle all over the blondies. Cut into squares. Enjoy!
