Beer Brownies
I had this great idea for Father’s Day to make a recipe with beer. I thought it would be a fun way to honour the men in my life. I looked around for recipes and came across cookies or brownies. I decided to go the brownie route. To make my life even easier, I decided to try to substitute beer instead of water in a boxed brownie mix. Truth be told, you could not taste the beer too much just by that substitution, but I also made a beer icing and that gave the brownies that hint of beer aftertaste. I did not want to overdo it because beer can become bitter. All in all it was worth a try and tasted great nonetheless.

Beer Brownies
Yield: 12 brownies
INGREDIENTS:
1 boxed brownie mix
1/3 cup oil
1/4 cup beer
1 egg
Icing
1 stick butter, softened
2 cups icing sugar
3 tbsp beer
DIRECTIONS:
1. Follow boxed directions on brownie mix, substituting beer for water/milk. Bake and cool as directed.
2. Meanwhile make the icing. In a stand mixer, with the paddle attachment, mix up softened butter until smooth and creamy. Add in the powdered sugar. Mix until combined. Add in beer and continue mixing on medium speed until light and fluffy, about 3 minutes. Add in food colouring, if using, and mix until combined. Set aside.
3. Once the brownies are fully cooled, ice with the beer icing. Decorate with sprinkles. Enjoy!
