Passover Hazelnut Brownies
One of the easiest baking items to make for Passover is brownies. Brownies typically use very little flour so even with a small substitute, you don’t compromise on taste.
These hazelnut brownies are a must this Passover. They are so simple to assemble and they still taste, chocolatey, nutty and chewy. The secret ingredient to these brownies is the Gefen hazelnut brittle. You don’t have to use it, you can use regular roasted hazelnut pieces, but if you can find it, this is well worth the addition.

Passover Hazelnut Brownies
Yield: 12-15 brownies
INGREDIENTS:
½ cup chocolate chips, melted
1 tbsp hazelnut milk (optional)
6 tbsp vegetable oil
2/3 cup sugar
2 eggs
2 tsp vanilla (kosher for Passover)
¼ cup cocoa powder
3 tbsp tapioca starch
Salt, pinch
1/4 cup + ¼ cup hazelnut brittle (or roasted chopped hazelnuts)
DIRECTIONS:
1. In a small bowl, sift together cocoa powder, tapioca starch and salt. Set aside.
2. In a microwave safe bowl, place chocolate chips and hazelnut milk. Heat for 1 min. Stir until melted and incorporated. Set aside.
3. In a large bowl, beat together with a hand mixer the oil and sugar. Add in eggs and beat for 2 minutes until eggs are pale and fluffy.
4. Add in melted chocolate and vanilla.
5. Add in dry ingredients and mix until incorporated.
6. Stir in ¼ cup hazelnut brittle.
7. Place batter in a lined and greased square pan and sprinkle with remaining hazelnut brittle.
8. Bake in 350-degree oven for 25 minutes.
9. Let cool before removing from pan and cutting into squares. Enjoy!
*If you don’t have hazelnut milk, you can use regular milk, any nut milk or omit altogether- the chocolate will still melt in the microwave without the added liquid.
