Passion Fruit Bundt Cake

I love passion fruit! It is my latest obsession. I have always enjoyed passion fruit flavoured foods, but I never bought passion fruits and used them at home. I was always worried it would be too complicated. Well, that was silly of me because I have been missing out!

I found this cake recipe on A Classic Twist blog. I did substitute some of the ingredients for regular flour as I didn’t have the corrects flours, but it still came out perfectly delicious!

Don’t be scared to use passion fruits at home because this cake is worth gossiping about!

Passion Fruit Bundt Cake

Yield: 12 servings

INGREDIENTS:
Cake
5 large eggs, at room temperature
1 ¼ cups granulated sugar
Zest from 1 lemon
½ cup + 2 tablespoons olive oil
1/3 cup sour cream
2 tbsp passion fruit puree, 8 passion fruits, (puree passion fruit pulp in blender, sieve out the seeds)
1 3/4 cup flour
1/2 tbsp baking powder
Passion Fruit Syrup
1/3 cup passion fruit puree
1/3 cup granulated sugar

DIRECTIONS:
1. In a large bowl combine the eggs, sugar and lemon zest. Beat on medium speed until pale and light, about 5 minutes.
2. Add the olive oil, sour cream and passion fruit puree. Beat until just combined.
3. Reduce mixer to low speed and gradually add the flour and baking powder. Mix until just combined. Do not over mix.
4. Spoon cake batter into greased and floured bundt pan.
5. Bake cake at 350 degrees for 40-45 minutes or until a cake tester inserted into the middle comes out clean.
6. While the cake is baking, make the passion fruit syrup. In a medium saucepan set over medium heat, bring to a boil the passion fruit puree and sugar. Let simmer for 4-5 minutes until slightly reduced. Remove from heat and let the syrup cool.
7. Remove cake from oven and let the cake cool in the pan for at least 10 minutes before inverting onto a wire rack to cool.
8. Brush the cake while still warm with the passion fruit syrup. This adds moisture and more passion fruit flavor to the cake.
9. Serve cake with a dusting of powdered sugar or a simple passion fruit glaze (combine passion fruit puree with powdered sugar to make the glaze). Enjoy!
