Herby Fried Halloumi Salad with Heirloom Tomatoes

I am back with another amazing summer salad. Seems to be my specialty, creating fun salads to eat. I think I just get bored of having the same old salad all the time. I am also obsessed with using heirloom tomatoes in the summer. I love the bright colours and the amazing flavour. Put a little sea salt on top and it tastes like heaven.

Halloumi is a middle eastern cheese and it has a high melting point, making it super easy to fry without it melting. So you can get this amazing brown crust on the edges of the cheese, with a warm center. Paired with fresh herbs and tomatoes…. yum!!!!

Herby Fried Halloumi Salad with Heirloom Tomatoes

Yield: 4 servings

INGREDIENTS:
1 pkg halloumi cheese, cut into cubes
3 heirloom tomatoes, cut in slices
1 cup arugula
2 tbsp mixed fresh herbs (I used parsley, dill, thyme, mint)
2 tbsp olive oil
1 tbsp balsamic glaze
Sea salt/pepper, to taste

DIRECTIONS:
1. Spray the halloumi cubes with cooking spray. Fry in a greased hot pan until all sides of the cubes are brown. Remove from heat.
2. To assemble salad, on a large board or platter, place arugula. Line arugula with heirloom tomatoes. Scatter the fried halloumi cubes on top of the tomatoes. Sprinkle with herbs. Drizzle olive oil and balsamic glaze all over the salad. Season well with sea salt and pepper. Enjoy!
