Tex-Mex Latkes
Ok people! If you have been following all week, you will realize that it is latke week!
This is the last recipe of the week and it’s a fun one. Tex-Mex latkes take my classic latke to the next level by adding taco seasoning into the batter. Top these latkes with salsa, shredded cheese and avocado.
That is how I chose to serve them, but the variations are endless. Set up a taco topping bar and allow your guests to create their own.
A taco bar and Tex-Mex latkes make for a Hanukkah party worth gossiping about!
Tex-Mex Latkes
Yield: 30 latkes
INGREDIENTS:
30 Tex-Mex latkes, recipe below
1/2 cup salsa
1/4 cup shredded cheese
1 avocado, thinly sliced
DIRECTIONS:
1. Make the Tex-Mex latkes and set aside, recipe below.
2. Top each latke with salsa, shredded cheese and a slice of avocado.
3. Serve with chips and lime. Enjoy!
Tex-Mex Latke Batter
Ingredients:
6 potatoes, peeled
1/2 large onion, cut
1 egg
1/4 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/2 tbsp taco seasoning
Oil for frying
Directions:
1. In a food processor, grate all the potatoes and the onions.
2. Squeeze out the excess water using a towel and/or your hands. Place into a large bowl.
3. Add in the egg, flour, baking powder, salt and taco seasoning. Mix well.
4. In a large frying pan, place enough oil to reach 1-2 inches up the side of the pan. Bring up the heat.
5. Using a large tablespoon, scoop out some of the potato mixture and fry on both sides until brown.
6. Set aside to cool. Enjoy!
