Passion Fruit Lemonade with Mint
Don’t expect my passion fruit recipes to slow down anytime soon! I am literally obsessed! I am trying to do anything and everything with these little jewels of tartness.
Today I am making a passion fruit lemonade. The best part is- you can serve it in a large pitcher on a hot day or make individual cups. The key is making a simple syrup out of the passion fruit, Oh, and if you have had a hard day- add some rum!

Passion Fruit Lemonade with Mint
INGREDIENTS:
By the cup:
2 tbsp passion fruit simple syrup (recipe below)
Juice of 1/2 lemon
Rum, splash (optional)
Water
Ice
Mint/Passion fruit seeds, garnish
By the pitcher:
2 cups passion fruit simple syrup
1 1/2 cups lemon juice
2 shots of rum (optional)
2 cups water
2 sprigs of mint leaves
Ice
Passion fruit seeds, garnish
DIRECTIONS:
1. To make the simple syrup, place 1/2 cup water and 1/2 cup sugar in a pot. Bring to a boil and stir constantly until the syrup has dissolved into the water. Remove from heat and scoop the flesh of 4 passion fruits into the pot. Cover and let steep for 2 hours. After 2 hours, strain the syrup into a jar. Reserve the seeds for garnish.
2. To make a cup of lemonade, place the passion fruit simple syrup, lemon juice, rum and ice into a cup. Fill the rest of the way with cold water. Garnish with reserved passion fruit seeds and mint leaves.
3. To make a pitcher, place simple syrup, lemon juice, rum and ice into a pitcher. Fill rest of way with water. Stir in lemon slices, passion fruit seeds and mint leaves. Enjoy!
