Cheddar Biscuits

I am usually not much of a biscuit person, but I kept eyeing so many beautiful biscuit recipes on my Instagram feed. I always loved cheddar biscuits but I find the task of folding and rolling daunting. So, I decided to take a recipe and make the entire thing in my food processor.

Well, my risk paid off because these biscuits may not be the prettiest ever, but they taste amazing and only took seconds to prepare. Win-win to me!

Shred up that cheddar cheese because these biscuits are worth gossiping about!

Cheddar Biscuits

Yield: Approx. 18 biscuits

INGREDIENTS:
2 cups flour
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp sugar
1 tsp garlic powder
1/2 cup butter, cold and cubed + 2 tbsp butter, melted
1 cup buttermilk
1 1/2 cup sharp cheddar cheese, shredded
3 green onions, chopped
1 tbsp parsley, chopped

DIRECTIONS:
1. In a food processor, place the flour, baking powder, baking soda, salt, sugar and garlic powder. Pulse a few times to combine.
2. Add in the cold cubed butter and pulse until combined.
3. With the food processor on, pour in the buttermilk through the spout at the top. Dough should form.
4. Add in cheese, onions and parsley. Pulse until just combined. Pour dough into a bowl- it may be sticky- that’s OK.
5. Using a large ice cream scoop, scoop our rounds and place on a baking tray lined with parchment paper.
6. Place baking tray in fridge for 30 minutes before baking.
7. Before baking, shape the dough balls into a more flat uniform circle with your hand pressing down slightly.
8. Bake in 425 degree oven for 10 minutes.
9. After 10 minutes, open oven and paint all the biscuits with melted butter. Continue to baker for 2-3 minutes or until golden brown. Enjoy!
