No Churn Cookies and Vanilla Passion Fruit Swirled Ice Cream
I kept reading about this no churn ice cream. It really sounded too good to be true. I can make ice cream at home, without an ice cream machine… this is life changing!!!
Ice cream is my ultimate favourite treat. But guess what?! Now that I can make it at home, the possibilities are endless! I always loved passion fruit flavour so when I saw a whole bunch of them at the supermarket, I decided to buy them and experiment. I figured I would go all in experimenting with passion fruit and ice cream, together, for the first time.
It did not disappoint! The passion fruit flavour was perfect, the ice cream was creamy and the whole process was SUPER easy.
I challenge you to try this no churn ice cream method, because this ice cream is worth gossiping about!
Cookies and Vanilla Passion Fruit Swirled Ice Cream
Yield: 8-10 servings
INGREDIENTS:
1 10 oz can + 4 oz (1/2 cup) sweetened condensed milk
2 cups whipping cream, cold
2 tsp vanilla
Pinch of salt
1/2 cup passion fruit juice (8 passion fruits)
1/2 cup vanilla wafer cookies, crumbled
DIRECTIONS:
1. In a blender, scoop out the contents of the passion fruits. Blend until the seeds are separated from the juice. Strain mixture through a sieve and set aside the juice.
2. In a smaller bowl, whisk together the 10 oz can of sweetened condensed milk, vanilla and salt. Set aside.
3. In a separate bowl, mix together 1/2 cup sweetened condensed milk and the passion fruit juice. Set aside.
4. In a stand mixer, using the whisk attachment, on medium-high speed, whisk the cold whipping cream until it forms stiff peaks. May take a few minutes.
5. Once you have the stiff peaks, remove about 1 cup of the cream and gently fold into the vanilla milk mixture.
6. Remove another 1/2 cup of whipped cream and gently fold into the passion fruit mixture.
7. Now pour the vanilla milk mixture back into the big bowl of whipping cream and gently fold together until incorporated.
8. Mix in crumbled cookies until combined.
8. Pour into a loaf pan. Swirl in the passion fruit mixture by pouring it in swirls and then mixing very few times with a small spoon.
9. Freeze for 8 hours. Enjoy!
