Hearts of Palm and Mandarin Salad
I am always looking for new ways to use hearts of palm. I love them! I made a very simple salad using ingredients you may not normally pair together. But sometimes taking a culinary risk is worth it because the salad was delicious!
Don’t underestimate hearts of palm because this salad is worth gossiping about!
Hearts of Palm and Mandarin Salad
Yield: 4 servings
INGREDIENTS:
1 head romaine lettuce or mixed greens
1 can hearts of palm, thinly sliced
1 can mandarin oranges
1 avocado, sliced
1 cup puffed rice noodles or crunchy salad noodles
1 tbsp fresh basil, chopped
Dressing:
Juice of 1 lime
1 tbsp olive oil
1 tsp honey or agave
Salt/pepper, to taste
DIRECTIONS:
1. In a small bowl, whisk together dressing ingredients. Set aside.
2. In a large bowl, place the romaine lettuce. Place avocado slices around the rim on the bowl. Fill the center of the salad with hearts of palm and mandarin oranges. Scatter chopped basil. Place heaping cup of crunchy noodles on top of the salad. Serve with dressing on the side or mixed in. Enjoy!
