Summer in a Bowl Salad
This salad right here is summer in a bowl. It is a unique combo of fruits and vegetables, but trust me, it goes well together. I always see either cucumber watermelon salads or cucumber strawberry… so I thought why not combine everything in one bowl? I added in the zucchini on a whim, but again, it works!
The addition of the feta for saltiness, almonds for crunch and basil for dimension make this salad totally worth gossiping about!
Summer in a Bowl Salad
Yield: 4-6 servings
INGREDIENTS:
1 head of romaine lettuce, chopped
1 cup arugula
1 small zucchini, peeled into ribbons
2 small cucumbers, peeled into ribbons
1/2 cup watermelon, cut into small cubes
1/4 cup sliced strawberries
2 tbsp almonds
2 tbsp feta, crumbled
1 tbsp basil, chopped
Dressing
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tsp sugar
1 tsp Dijon mustard
1/2 tsp Italian seasoning
Salt/pepper, to taste
DIRECTIONS:
1. In a small bowl, whisk together the dressing ingredients. Set aside.
2. To assemble the salad, place all the ingredients in a large bowl, Toss with dressing. Enjoy!
** Note: Dressing can easily be doubled, quantities of ingredients can be tweaked to your liking. Be creative!
