Instant Pot Beef Ragu
I am all about the love it and leave it meals. The best appliance for that is by far the Instant Pot. Whatever you put in there, when you open it up, it always smells and tastes amazing. I think the pressure really gets those flavours marrying together.
I was sick of all my usual meat sauces so I decided to switch it up. I knew I was getting a fresh delivery of homemade pasta from my girl, Mel, at Noodle Perfect. So, I decided to showcase her papardelle pasta with an amazing beef ragu sauce. The noodles, nor the sauce, did not disappoint.
If you have an Instant Pot, this is a must try beef ragu sauce. Your pasta will be gossiping all day long!
Instant Pot Beef Ragu
Yield: 6-8 servings
INGREDIENTS:
2 lbs beef cubes
1 can crushed tomatoes
1/2 cup beef stock
1/4 cup red wine
1 carrot, small dice
1 celery stalk, small dice
1 small onion, small dice
1-2 cloves of garlic, smashed
2 tsp sugar
Salt/pepper, to taste
3 thyme sprigs
2 tbsp fresh parsley, chopped
DIRECTIONS:
1. In your instant pot, on saute mode, place a tbsp olive oil. Saute the carrots, celery, onions and garlic until fragrant.
2. Add in the beef cubes and cook until slightly brown. Turn saute mode off.
3. Add in the tomatoes, beef stock, red wine, sugar, salt, pepper and thyme. Mix well.
4. Place the lid on the instant pot and turn valve to seal. Set to high pressure for 30 minutes. Let natural release for 15 minutes.
5. Remove beef cubes from the pot and shred with 2 forks. Add in the sauce from the pot and fresh parsley. Mix until ragu is thick and combined with sauce.
6. Serve over pasta. Enjoy!
** Note: This sauce can be made in a slow cooker as well or on the stove top in a large pot- cooking time will vary.
