Nicoise Salad

If you have been following me, you must know by now that I love a good salad. This salad does not disappoint as it has everything you could possibly want on one big plate.

You have your veggies, proteins and carbs. I love eating this nicoise salad for dinner because it leaves you feeling full. I swapped out the tuna for salmon and I added feta because, why not! Salads are amazing because you can customize them as you wish.

Next time you have a fresh piece of salmon, make this salad, it is surely worth gossiping about!

Nicoise Salad

Yield: 4 servings

INGREDIENTS:
4 salmon fillets
1 romaine lettuce, chopped
Handful mixed greens
4 eggs, hard boiled, halved
1 cup green beans, cooked
1 cup mini potatoes, halved, boiled
1/2 cup cherry tomatoes, quartered
Dressing
1/2 cup olive oil
1/4 cup lemon juice
2 tsp grainy mustard
Salt/pepper, to taste

DIRECTIONS:
1. On a baking tray, season salmon with salt and pepper. Bake in 350 degree oven for 15 minutes. Set aside.
2. To assemble salad, place lettuce and mixed greens on the bottom of a platter. In small piles, place all of the ingredients. Drizzle with dressing. Enjoy!
