Cherry Farro Salad
I love different type of salads. Sometimes the best salads have the fewest ingredients but the most delicious flavour. This salad does not disappoint!
The sweetness/tartness of the cherries with the saltiness of the feta mixed with the richness of the farro makes the perfect summer salad combination! I tied it all together with a super simple lime vinaigrette.

Cherry Farro Salad
Yield: 4 servings
INGREDIENTS:
1 cup farro
2 cups vegetable stock
2 tbsp sliced almonds
1 tbsp parsley
1/2 cup cherries, chopped
1/4 cup feta, cubed
Dressing:
Juice of 1/2 lime
2 tbsp olive oil
Salt/pepper, to taste
DIRECTIONS:
1. In a pot mix together vegetable stock and farro. Bring to a boil and then simmer for 30 minutes until farro cooked through. Drain any excess water and place farro in a large bowl. Let cool.
2. Add in almonds, parsley, cherries, feta and dressing into the farro. Mix well. Enjoy!
