Single Serving Guacamole and Chips

I’m still dreaming about my recent trip to Mexico. It was the perfect vacation and exactly what I needed. It was a blessing to get away and relax, kid free! I must have eaten my weight in guacamole. The guac there was AMAZING! So fresh. And the chips…. thick, crunchy goodness.

I needed to recreate the way they made that guacamole because I am having withdrawals. First, let me start by saying I already thought I made the best guacamole but I think I was wrong. I really enjoyed the way it was made in Mexico much better. Granted, it also tasted better because the avocados were probably perfectly ripe, directly off the tree but I can only do so much here in the cold white north.

I grabbed some avos, tomatoes, white Spanish onion (I discovered this was key), limes and cilantro. I also grabbed some corn tortillas so I could make my own chips! I am going to give you the portion for a single serving because sometimes you just want to veg on the sofa with a plate of guac and chips, for one! But obviously you can double, triple and octuple the recipe when entertaining.

Single Serving Guacamole and Chips

Yield: 1-2 serving(s)

INGREDIENTS:
1 avocado, mashed
Juice of 1/2 lime
1 tomato, small dice
1 tbsp Spanish onion, small chop
1 tsp cilantro, chopped
8 small taco size corn tortilla, cut into 8ths
Cooking spray
Salt/pepper, to taste

DIRECTIONS:
1. On a baking tray, place the taco chips on a baking tray. Spray with cooking spray and season with salt and pepper.
2. Place in oven and bake at 350 degrees for 15 minutes. Remove and set aside to cool.
3. Meanwhile, in a small bowl mix the mashed avocado with the lime juice. Sprinkle in some salt. Mix and set aside.
4. In a different small bowl, combine the tomatoes, onions and cilantro.
5. On a plate, place the avocado mixture in the middle. Top with the tomato mixture. Place chips around the guacamole. Enjoy!
