Chili Lime Kale Chips and Crunchy Chickpeas
Guys, I found an amazing use for that Trader Joe’s chili lime seasoning! I had some leftover kale from my kale Caesar salad so I decided to create the easiest, no fat, Netflix and chill snack.
The crunch from the kale is so delicate- almost melt in your mouth. Paired with the overly crunchy chickpeas- I think I found the perfect new food couple. Season with as much (or as little) chili lime seasoning you heart desires.
This snack was gone quickly when served to my weekend guests and is for sure worth gossiping about!
Chili Lime Kale Chips and Crunchy Chickpeas
Yield: 4-6 servings
INGREDIENTS:
1 10oz bag of washed and cut kale
1 19oz can chickpeas, drained and dried well
Cooking spray
Trader Joe’s chili lime seasoning, generous sprinkle
DIRECTIONS:
1. On a large baking sheet, lay out the kale in one layer. Spray generously with cooking spray and sprinkle on as much chili lime seasoning as you like. Give it a mix and repeat one more time. Place in a 300 degree oven for 15 minutes. Check on it, stir and continue baking another 10 minutes or until crispy- but not burned.
2. Once you remove the kale chip, increase the oven to 400 degrees.
3. Place your drained and dried chickpeas on a baking tray in one layer. Spray with cooking spray and sprinkle on as much chili lime seasoning as you like. Give it a mix and repeat one more time. Place in a 400 degree oven for 20 minutes. Check on them, stir and bake another 20 minutes until crispy and golden.
4. Once fully cooled, serve together in one bowl, or serve side by side. Enjoy!
