Mini Meatloaf
Sometimes we need a super quick evening meal that we can make ahead and eat all week. These Mini Meatloaves do the trick. I usually make a large meatloaf, but I sometimes find it falls apart and it takes much longer to cook.
Usually I tend to use Ina Garten’s meatloaf recipe, and while it tastes great- it has more cooking steps that I just don’t have time for. So, I decided to make a super easy version and divide it into 6 mini loaves. It cut the cooking time in half plus you get that crispy outer edge in every bite.
My secret is mixing ketchup with BBQ sauce to drizzle on top. Don’t forget to serve with mashed potatoes and broccoli.

Mini Meatloaf
Yield: 6 servings
INGREDIENTS:
1 lb lean ground beef
1/4 cup breadcrumbs
1 onion, finely chopped or grated
1 tbsp ketchup + 1 tbsp ketchup
1 egg
Paprika, generous sprinkle
Garlic powder, generous sprinkle
Salt/pepper, to taste
1 tbsp BBQ sauce
DIRECTIONS:
1. In a large bowl, place the meat, breadcrumbs, onion, 1 tbsp ketchup, egg and seasonings. Mix together with your hands until combined.
2. Divide the meat into 6 equal parts and mold it into 6 mini meatloaves. Place on a lined baking tray.
3. Mix 1 tbsp of ketchup and 1 tbsp BBQ sauce together. Spoon over each meatloaf and brush until all sides are covered in the sauce.
4. Bake at 350 degrees for 30 minutes.
5. Remove from oven and paint extra sauce on top (optional). Enjoy!
