Meatball Sub

I was so lazy one evening and I couldn’t decide what to make for dinner. I had a package of ground beef and although this dinner wasn’t planned, it ended up being one of the tastiest creations yet!

I decided to make a simple meatball recipe, baked in the oven with tomato sauce. I served it inside a hot dog bun and topped it with some sauteed vegetables. The meatballs were so soft and delicious- we had leftovers the next day and it was just as tasty! Oh, and the biggest win- my kids ate the meatballs as well!!!!

If you want a simple, make ahead meal that will please everyone in the family, this meatball sub is worth gossiping about!

Meatball Sub

Yield: 6 subs

INGREDIENTS:
1 lb ground beef
1/2 cup panko crumbs
1/4 cup water
1 tsp onion soup mix
1 tsp beef soup mix
1 tsp Italian seasoning
1 tbsp ketchup
1 onion, thinly sliced
1 red pepper, thinly sliced
5 mushrooms, thinly sliced
1 tbsp fresh parsley, chopped
Salt/pepper, to taste
1/2 cup jarred marinara sauce, separated
6 hot dog buns

DIRECTIONS:
1. In a large bowl, place panko crumbs, onion and beef soup mixes, Italian seasoning, salt/pepper and water. Let the seasoned crumbs absorb the water for a few minutes. Add in the ground beef and ketchup and mix well using your hands until incorporated.
2. Using a large spoon, scoop out balls of the meat mixture. Roll into uniform balls and place on a greased baking tray.
3. Bake at 350 degrees for 10 minutes. After 10 minutes, open the oven and spoon about a tbsp of tomato sauce over each meatball. Bake an additional 10 minutes.
4. Meanwhile, saute the peppers, onions and mushrooms in a pan with a tbsp of olive oil. Season with salt and pepper. Once the vegetables are soft, add in parsley. Mix and set aside.
5. To assemble the subs, place 3 meatballs into each hot dog bun (you can toast them if you prefer). Top with the veggie mixture and additional marinara sauce. Serve with fries or chips. Enjoy!
