Orzo with Beef
Sometimes I come across a great looking recipe, but I think, how can I take this to the next level? Well, this is that recipe. I saw this initial orzo with peas recipe on @ruhama1 Instagram page. But I wanted to make it into a full meal.
Usually I add chicken into these types of recipes, so I thought to do something a little different. It really turned out well! And I added in some mushrooms because I love the combination of mushrooms with beef. But you can be creative and use whatever veggies you like!
This Orzo with Beef is a one pot meal worth gossiping about!
Orzo with Beef
Yield: 4-6 servings
INGREDIENTS:
2 tbsp olive oil
1 onion, finely chopped
1-2 garlic cloves, grated
1 tbsp tomato paste
1/2 tsp paprika
1 pkg beef cubes (usually about 1lb), cut into small, bite-size cubes
1/2 cup mushrooms, thinly sliced
1/2 cup frozen peas
2 cups orzo
2 cups chicken stock or water with 2 tsp chicken soup powder
2 tbsp fresh dill, chopped (optional)
Salt/pepper, to taste
DIRECTIONS:
1. In a large pot, bring olive oil up to a medium heat. Sauté the onions and garlic until soft.
2. Add in the tomato paste and paprika and stir until incorporated.
3. Add in beef cubes, and season with salt and pepper. Mix well until it is mixed in with the onions and garlic. Sauté a minute or two until beef starts to brown around the edges.
4. Add in peas, mushrooms and orzo. Mix until combined.
5. Add in the chicken stock. Bring to a boil and then cover and let simmer on stovetop for 30 minutes, mixing every so often to ensure the bottom doesn’t burn. If needed you can add more liquid, very little at a time.
6. Stir in fresh dill. Enjoy!
*if wanted, can always add some extra mushrooms and peas.
