Strawberry Rhubarb Parfaits

OK, here is the truth! This was supposed to be a strawberry rhubarb roll cake, but when I went to roll it, the cake completely fell apart. It tasted really yummy so I had to think fast on how I was going to salvage this mess… light bulb… Parfaits!

I think parfaits must have been created by someone who made a dessert mistake, but it’s genius. And it is a great dessert for Covid life because each person gets their own individual cup.

I am so thankful parfaits exist and let me tell you, it may have been a dessert gone wrong but the taste is so worth gossiping about!!!!

Strawberry Rhubarb Parfaits

Yield: 10 parfaits

INGREDIENTS:
1 box vanilla cake mix, baked, cooled and cubed
3 rhubarb stalks, thinly sliced
1 pkg strawberries, thinly sliced
3 tbsp sugar
1 tsp corn starch
2 tbsp water
1 tbsp lemon juice
Whipped cream, store bought or homemade

DIRECTIONS:
1. To make the strawberry rhubarb sauce, place the strawberries, rhubarb, sugar, corn starch, water and lemon juice in a pot. Cook until fruit is soft and it thickens into a sauce- about 10 minutes. Set aside and let cool. Once it is room temperature, place in fridge for a few hours before assembling the parfaits.
2. In a glass cup, place a layer of cubed cake. Top with a tbsp of the strawberry rhubarb mixture and a heaping tbsp of whipped cream. Repeat the layers one more time. Top with mint. Enjoy!

** Notes: You can also make this into one large parfait, by putting the same layers into a large glass bowl.
