Marinated Heirloom Tomatoes with Buffalo Mozzarella

This has got to be one of the easiest recipes to throw together. You need few ingredients and the longer you let it sit, the yummier it becomes so it’s a perfect make ahead lunch or side dish.
Ideally you would use heirloom tomatoes, the taste really does make a difference. But if you don’t have access to them, regular off the vine tomatoes will do. The key is in the herbs. Use whatever combination you enjoy. For this recipe, I mixed together basil, parsley, dill, mint and thyme… that’s a whole lot of herby goodness!

Marinated Heirloom Tomatoes
with Buffalo Mozzarella
Yield: 2-4 servings
INGREDIENTS:
1 large buffalo mozzarella ball
4 large heirloom tomatoes, large dice
2 tbsp fresh herbs, chopped, any combination you enjoy
2 tbsp olive oil
1 tsp sea salt
Balsamic glaze, for drizzling
Crusty bread, for dipping
DIRECTIONS:
1. In a large bowl, place the chopped heirloom tomatoes, fresh herbs, olive oil and salt. Mix together and let marinate at least for 1 hour.
2. On a large plate, place the mozzarella ball in the center. Surround with the tomatoes and their juices. Drizzle entire plate with balsamic glaze. Serve with crusty bread. Enjoy!
