Kale Caesar Salad with Fancy Breadcrumbs

This recipe is originally from Molly Yeh. She is a super cute food network chef and I love her creativity in all her dishes. She is also half Jewish, so she has a lot of Jewish inspiration in her dishes. This dish isn’t particularly Jewish but I liked the concept nonetheless.

I swapped out the romaine lettuce for kale but you can use either or a combination of both. I used Molly’s dressing recipe but you can use your favourite store-bought Caesar dressing if you don’t have time to create you own. Now, for the best part, the breadcrumbs! I used croutons and mixed them with lemon zest, Parmesan cheese and fresh herbs and then I whizzed it all together in a food processor to get the perfect breadcrumb mixture.

This salad has a thick, creamy dressing, lots of cheese and the perfect breadcrumb mixture in every bite- it is for sure worth gossiping about!

Kale Caesar Salad with Fancy Breadcrumbs

Yield: 4-6 servings

INGREDIENTS:
Salad:
1 pkg of kale leaves, washed and cut
1/4 cup croutons
1 tbsp size chunk Parmesan cheese + more to grate over salad
Lemon zest, half of a lemon
1 tbsp fresh parsley
Dressing:
1/2 cup full-fat Greek yogurt
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
2 tablespoons lemon juice 
1 clove garlic, grated 
3 tbsp water
Salt/pepper, to taste

DIRECTIONS:
1. In a food processor, add croutons, Parmesan cheese, lemon zest and parsley. Whiz together until it is combined into a breadcrumb mixture.
2. In a small separate bowl, whisk together all the dressing ingredients. Set aside.
3. Place the kale into a large serving bowl. Sprinkle in 1/2 the breadcrumb mixture, grate some extra Parmesan cheese into salad and add some of the dressing. Toss until the kale is nicely coated (you can add more dressing as you go so you don’t over dress it). Sprinkle the remaining breadcrumbs on top and grate even more Parmesan cheese over top. Enjoy!
