Crab Salad with Lemon Garlic Toast
If you haven’t noticed by now, my mom has quite the collection of salad recipes that she has collected over the years. Since she doesn’t really have the passion for cooking that I have, salads tend to be an easy go to for larger events as they are easy to assemble and can be healthy and delicious. This recipe is another popular one from her collection.
In the Jewish religion, we are not permitted to eat shellfish. It is stated in the Torah that Jews are only permitted to eat fish with fins and scales- any other type of water animal is considered ‘unclean’. In modern days- many companies have come up with ‘fake’ crab and shrimp options which is usually made from white fish. This recipe uses that ‘fake’ type of kosher crab meat, which still is rather delicious.
The original recipe calls for strawberries in it along with the ‘crab’ and other ingredients, but I swap it our for tomatoes as I think it’s a better pairing. I also decided to make a lemon garlic bread along side as it can sop up some extra dressing and make the dish a bit heartier. This salad is unique, flavourful and definitely worth gossiping about!
Crab Salad with Lemon Garlic Toast
Yield: 6 servings
INGREDIENTS:
1 English cucumber, cubed
2 avocados, cubed
2 tomatoes, cubed
1 pkg kosher fake crab meat sticks, usually in frozen section, cut up into small pieces
Juice of 1 lime
Juice of 1 lemon
2-3 tbsp olive oil
Salt/ pepper to taste
1 baguette, sliced on a diagonal
Butter or margarine
1/2 garlic clove
1/2 lemon
*** original recipe calls for 1 1/2 cups of strawberries instead of tomatoes.
DIRECTIONS:
1. Place all salad ingredients into bowl. Toss.
2. Butter or margarine the sliced baguette and then place into toaster oven until brown.
3. Remove from toaster and while still hot, rub half a garlic clove and half a lemon onto the tops of the toast. Serve with salad. Enjoy!
