Baby Kale Caesar Salad
Salads are my favourite, I especially like Greek and Caesar salad. I wanted to do a modern take on the classic Caesar salad. Kale is all the rage these days and I have heard of the kale Caesar salad, but if I’m being honest, I don’t love kale. I find it to be very firm and it has a distinct taste. Unless you make me a kale chip, I ain’t eating it.
Flash forward- I’m at the grocery store and I come across a package of baby kale. Small, delicate leaves that look and taste similar to your regular baby mixed greens. A much milder taste and a perfect texture. Now my kale problems are solved. I mix this baby kale with the classic romaine lettuce for a perfectly balanced Baby Kale Caesar Salad. I made my own garlic bread croutons, grated in tons of fresh Parmesan cheese and added some store bought ‘facon’. My other favourite Caesar salad addition are thinly sliced mushrooms. And never forget to serve with a side of lemon wedges because a squeeze of lemon on your Caesar is perfection. Grab your favourite bottled Caesar dressing and some baby kale and you got yourself a modern twist on a classic that is worth gossiping about!
Baby Kale Caesar Salad
Yield: 4-6 servings
INGREDIENTS:
1 package baby kale leaves
1 head romaine lettuce, chopped
2 tbsp fake bacon
1/4 cup grated Parmesan cheese
1 small french baguette
1 tbsp butter
1 clove garlic
1 lemon, cut into wedges
2-3 mushrooms, thinly sliced (optional)
Favourite bottle of Caesar dressing
DIRECTIONS:
1. Make the croutons- slice your french baguette vertically and spread butter on both halves. Place into a toaster oven and toast on high until golden brown. Remove from toaster and rub inside half of a garlic clove over the bread. Cut into cubes and set aside.
2. In a large bowl, place the kale, romaine, facon, cheese, croutons and mushrooms (if using).
3. Mix in your favourite Caesar salad dressing.
4. Add more grated cheese on top, serve with lemon wedges on the side. Enjoy!
