Farro Greek Salad
Farro is the grain I never knew I loved. It’s chewy and healthy and goes great in a salad. I was first introduced to farro by Ina Garten. She made the most amazing salad… but that recipe is for another day.
Today, I am going to share my Farro Greek Salad creation. It is super easy, super versatile and super yummy.
Go to the grocery store and grab some farro, because this grain is worth gossiping about!
Farro Greek Salad
Yield: 4 servings
INGREDIENTS:
1 cup farro
3 cups water
2 small cucumbers, small dice
2 radishes, small dice
1 celery stalk, thinly sliced
1/2 red pepper, small dice
1 tomato, small dice
1 green onion, chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1/4 cup feta, crumbled
1/4 cup olive oil
Juice of 1 lemon
Salt/pepper, to taste
DIRECTIONS:
1. In a sauce pan, place the farro and water. Bring up to a boil, then lower heat to simmer and simmer uncovered for 30 minutes until farro absorbed most of the water. Drain and set aside.
2. In a large bowl, place the farro, all the chopped vegetables, herbs and feta.
3. Add in the oil, lemon, salt and pepper. Mix well. Enjoy!
