Couscous Greek Salad
I am always looking for easy, make ahead meals. Something I can grab on the go, either to pack in my work lunch or to grab while I’m at home. This salad ticks all the boxes. It keeps you full, it has tons of flavour and it is so easy to put together.
Pearl couscous tossed with feta, chickpeas and all the Greek salad vegetables. Add dill for an extra freshness and a light vinaigrette. The perfect lunch time salad that is worth gossiping about!
Couscous Greek Salad
Yeild: 6-8 servings
INGREDIENTS:
1 pkg pearl couscous (250g), cooked by pkg directions
1/3 cup chickpeas
1 celery stalk, chopped
1-2 small cucumbers, chopped
1 large tomato, diced
1/2 red pepper, diced
1-2 green onions, chopped
2 tbsp fresh dill, chopped
1/4 cup feta, crumbled
Dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
2 tbsp lemon juice
1 tsp dijon mustard
Salt/pepper, to taste
DIRECTIONS:
1. In a small bowl, whisk together dressing ingredients. set aside.
2. In a large bowl, place all the salad ingredients. Top with the dressing. Enjoy!
Note: If you make ahead, salad may get a little dry, I serve with lemon wedges and that adds that extra moisture and freshness.
