Bagel and Lox Devilled Eggs

This dish all started because I was trying to earn a job for World Egg Day 2020. Meanwhile, after I worked all day to create, shoot and edit, I went to apply and realized it was only based on social media followers and numbers. That is very frustrating to me because I do not think the numbers necessarily reflect the talent. I have seen AMAZING photos from people with very little followers and, dare I say it, terrible photos from people with thousands of followers…. but anyhoo….

The good news is, I created a new dish for all my beloved followers to enjoy and that is what counts in my eyes! This dish is also the perfect appetizer to any meal, but especially the breaking of the fast meal for Yom Kippur- our day of atonement.

These are super easy, pop in your mouth, flavourful bites of goodness worth gossiping about! Hope you all have a meaningful fast and happy and healthy year ahead.

Bagel and Lox Devilled Eggs

Yield: 10 devilled eggs

INGREDIENTS:
5 eggs
1 tbsp mayonnaise
1 tbsp sour cream
1 tbsp whipped cream cheese
1 tsp chives
Salt/pepper, to taste
1 slice lox, finely chopped
1 tsp fresh dill, chopped
1 tbsp everything bagel seasoning
10 bagel chips

DIRECTIONS:
1. For the perfect hard boiled eggs, every time- In a large pot, place the eggs and fill up with cold water. Cover the pot and bring to a boil. Once boiling, turn off the heat but leave the pot covered for 15 minutes. Drain the water and run eggs under cold water. Shell, rinse and dry the eggs. Set aside.
2. In a bowl, mix together mayo, sour cream, cream cheese, chives, salt and pepper.
3. Once cooled, cut the eggs in half lengthwise and remove the yolks, placing them in the bowl with the cheese mixture.
4. Mash in the yolks until you have a uniform, creamy texture. Place yolk mixture into a ziploc bag, pushed into the corner.
5. To assemble the devilled eggs: cut the corner of the ziploc bag and squeeze the yolk mixture back into the yolk pocket of each egg.
6. On a large serving platter, place a bagel chip on the platter. Put a devilled egg on top. Top the egg with chopped lox, dill, and sprinkle with everything bagel seasoning. Repeat until all eggs are completed. Enjoy!
