Veggie and Cheese Egg Bites
This is about as simple as it gets. If you want to have a quick, grab and go breakfast prepped and ready, this is for you! At the beginning of the week, I like to prepare these egg bites with whatever is left in the fridge. You can change up the flavours and throw in whatever suits your taste.
Here are some combinations that I enjoy:
Red pepper, herbs (dill and parsley), feta
Broccoli, cheddar (sometimes I add mushroom too)
Assorted mushrooms, thyme, mozzarella
Salsa, corn, black bean, cheddar
Leek, dill, goat cheese
But, the possibilities are endless. Grab a carton of eggs and whip these babies up in 5 minutes flat, because these egg bites are worth gossiping about!
Simple Egg Bites
Yield: 12 egg bites
INGREDIENTS:
8 eggs
1/2 cup milk
3/4 cups veggie (red pepper), finely chopped
1/4 cup cheese (feta), grated or crumbled
1/4 cup fresh herbs (dill/parsley), finely chopped
Salt/pepper, to taste
DIRECTIONS:
1. In a silicone muffin tin, place 1 tbsp of veggies in each cup, 1 tsp of cheese in each cup and 1 tsp fresh herbs in each cup. Set aside.
2. In a large bowl, beat together egg, milk and salt and pepper.
3. Pour the egg mixture into each muffin cup until it reaches the top.
4. Bake in 350 degree oven for 30 minutes until eggs are set. Enjoy!
