7-Bean Salad

You know what they say about beans…. They’re good for your heart, duh! But in all seriousness, this recipe comes from my Mom. She frequently makes this bean salad to go along with our family dinners. It’s one of the only salads that pleases most everyone in our family, especially my brother-in-law, who doesn’t care for most veggies.

This 7-bean salad is colourful, flavourful and full of protein- so you can always have it as a quick lunch as well. Also, this salad is literally one of the easiest things you can possibly prepare, and it only gets better marinating in the dressing, so it’s a great make ahead sort of salad as well. And the more you eat, the more you….

So…. when you are pressed for time, want a protein fix or just want to impress guests- try this one out because this 7-bean salad is worth gossiping about!

7-Bean Salad

Yield: 8-10 servings

INGREDIENTS:
2 cans mixed beans
1 can cut green beans
3/4 a can of corn kernels
1/2 red pepper, diced
1/4 red onion, small dice
1 tbsp fresh dill (optional)
Dressing:
1/2 cup oil
1/2 cup white vinegar
1 tbsp oregano
1 tsp garlic powder or 1 clove minced
Salt/ pepper

DIRECTIONS:
1. In a jar, place all dressing ingredient. Mix until combined.
2. In a large bowl, place all the bean salad ingredients. Toss with dressing.
*** Recipe is best made a day ahead and placed in a jar in the fridge to marinate.
