Tropical Fruit Salad with Yogurt Drizzle
Hola! I just returned from a fantastic trip to Mexico. It was our 10 year wedding anniversary so we headed down to paradise to celebrate. It was a fabulous time of rest, more rest, food and more food! I am not much of a breakfast person while my husband loves a big breakfast. I love a coffee and a croissant. That is my go-to. But in Mexico, they had these fruit cups with layers of papaya, melons and pineapple. It was so fresh and sweet and delicious! It became a welcomed addition to my morning coffee and croissant.
I decided to recreate this dish at home, but I needed to kick it up a notch (as Emeril would say). I made my life super easy by buying the pre-cut fruit at my local market. I then cut those chunks into smaller squares to recreate exactly how I had it in Mexico. I then took some vanilla yogurt and added some lime juice to thin it out. I drizzled this delicious yogurt over the fruit and added some granola for crunch. You can serve the yogurt on top or on the side. This is the perfect tropical dish to jazz up any brunch table or to brighten up the winter blues. This fruit salad is worth gossiping about!
Tropical Fruit Salad with Yogurt Drizzle
Yield: 4 servings
INGREDIENTS:
1 cup papaya, small dice
1 cup cantaloupe, small dice
1 cup honeydew, small dice
1 cup pineapple, small dice
1 small vanilla yogurt
Juice of 1/2 lime
1/2 cup granola
DIRECTIONS:
1. In a small bowl, whisk together vanilla yogurt and lime juice. Set aside.
2. In a large bowl, place the diced fruit in rows by colour.
3. Drizzle yogurt on top and serve with the remaining yogurt and granola on the side. Enjoy!
