Bubbie's Tomato Soup

As you know, my Bubbie is an amazing cook. Most of my Jewish style recipes are copies or exact replicas of her recipes. This recipe is not Jewish per se, but it is something she would make frequently.

She has not given me an exact copy of her recipe, as she really doesn’t have any. She made everything by hand and without any recipes. I have recreated this myself but it tastes the same- or close enough!

Thick tomato broth flavoured with the simplicity of onion, garlic, salt and pepper- that’s it! Add in some rice and you have yourself a replica of my Bubbie’s tomato soup worth gossiping about!

Oh, and don’t forget to serve with grilled cheese… duh!

Bubbie’s Tomato Soup

Yield: 6 servings

INGREDIENTS:
1 jar tomato puree (650ml)
4 cups water
1/2 cup raw rice
1 tbsp olive oil
1 small onion, grated
2 garlic cloves, grated
3-4 tsp sugar
Salt/pepper, generous amount to taste

DIRECTIONS:
1. In a pot, heat a tbsp of olive oil. Add in the onion and garlic and cook until soft and fragrent- about 2-3 minutes.
2. Add in the tomato puree, water, sugar, salt and pepper. Mix together and bring to a boil.
3. Add in the raw rice and cover pot. Simmer for 20 minutes.
4. Serve with grilled cheese or on it’s own. Enjoy!
