Bubbie's Mushrooms
This recipe come from my Bubbie (Grandmother). It is super simple. She would make this recipe to put on top of bread as an appetizer. In recent years, my mom would make it to put on top of schnitzel. However you want to eat these mushrooms, it is delicious.
I have come to realize that most of my Bubbie’s recipes have a similar base- onions, paprika, salt and pepper. It is amazing how delicious her food would taste and how simple and little ingredients she would use. She is still on this Earth but unable to cook anymore. Now I find myself cooking up some of her favourite recipes and giving it back to her to enjoy. It is such an amazing feeling to be able to do that. I am so glad I spent some time with her while she was well and able to learn some of my favourite ‘Bubbie’ recipes.
Give these mushrooms a try, they are so versatile, it will become a staple recipe in your house and one that is surely worth gossiping about!
Bubbie’s Mushrooms
Yield: 4 servings
INGREDIENTS:
2 cups white and/or cremini mushrooms, thinly sliced
1 onion, small dice
1-2 tsp paprika
Salt/pepper, to taste
1/4 cup water
Thyme, to garnish (optional)
DIRECTIONS:
1. In a large saucepan, saute the onion with some olive oil.
2. Once the onion soften, add in paprika, salt and pepper. Mix well with onions.
3. Add in mushrooms and mix well.
4. Add in water. Mix well.
5. Partially cover pot with lid and simmer until mushrooms are cooked through (if you need to add more water, you can always add a little bit at a time).
6. Add thyme, if using. Serve over bread or meat. Enjoy!
