Vanilla Raspberry Granola
I am not a huge fan of yogurt, but I do love to eat vanilla yogurt with fruit and granola. I think yogurt is so plain on it’s own, but crunch of the granola really makes the whole dish satisfying.
A great way to serve granola at a party is to make yogurt parfaits. You can layer the yogurt, granola and fruit all in a small cup- perfect to grab and eat. Alternatively, you can make a granola bar. Set up some yogurt flavours, different types of granola, nuts and fruits. Then your guests can build their own parfaits.
The options are endless but I have created all my favourite ingredients into this Vanilla Raspberry Granola. Grab your yogurt, because this granola is worth gossiping about!
Vanilla Raspberry Granola
Yield: 2-3 cups of granola
INGREDIENTS:
2 cups rolled oats
1/2 cup sliced almonds
3 tbsp brown sugar
Salt, sprinkle
1/4 tsp cinnamon
1/8 tsp nutmeg
3 tbsp butter
2 tbsp honey
1 tbsp sugar
2 tsp vanilla
1/3 cup freeze dried raspberries (or whatever berry you prefer)
DIRECTIONS:
1. In a large bowl, place oats, almonds, brown sugar, salt, cinnamon, and nutmeg. Mix together. Set aside.
2. In a smaller, microwave safe bowl, place butter, honey and sugar. Microwave for 1 minute. Remove and whisk. Put back in microwave for 30 seconds.
3. Remove from microwave and whisk in vanilla.
4. Pour over the oat mixture and stir together until everything is coated.
5. Spread in one layer on a greased baking tray.
6. Bake at 300 degrees for about 30 minutes, stirring occasionally.
7. Remove from heat. Stir mixture a few times while cooling to prevent large chunks from sticking together.
8. Once cooled,m stir in freeze dried berries. Serve over Greek yogurt, Enjoy!
