Tater Tot Skewers
It’s definitely odd to watch playoff basketball in August, but amazing at the same time! We have been missing out Toronto Raptors and it is so great to watch them play again.
To celebrate this event, I made my husband and I a special game day treat. These tater tot skewers are drizzled with homemade nacho cheese sauce, sour cream, tomatoes and green onion. They were gone in minutes.
Grab a bag of tater tots because these little gems dressed to the nines are worth gossiping about!
Tater Tot Skewers
Yield: 4 servings
INGREDIENTS:
1 pkg tater tots
1/4 cup sour cream
2 tbsp tomatoes, chopped
2 green onions, chopped
Salt/pepper/paprika, to taste
Cheese Sauce
2 tbsp butter
2 tbsp flour
1 cup milk
1/2 cup shredded tex mex cheese
Salt/pepper, to taste
DIRECTIONS:
1. Bake the tater tots as the package directs.
2. Meanwhile, make the cheese sauce. In a pot, melt the butter. Add in the flour and whisk until combined. Whisk in the milk until sauce is uniform. Add in the shredded cheese, salt and pepper. Whisk until cheese is melted. Cook for 15 minutes, whisking every few minutes, until thick and smooth.
3. When the tater tots are done in the oven, take a small skewer and place about 4-5 tater tots per skewer. Place on a large platter.
4. Drizzle with the nacho cheese, sour cream and sprinkle with chopped tomatoes, onions. Sprinkle with salt, pepper and paprika. Enjoy!
