Macaroni Salad
This is the perfect BBQ salad. While the weather isn’t exactly ready for full BBQ season, we still like to BBQ in the late winter/early spring. I am always looking for new recipes for BBQ because we love to grill.
This macaroni salad is so simple to cook up and pairs so nicely with any meaty BBQ meal- especially grilled chicken drumsticks. It’s tangy, it’s creamy and its hearty. And the best part- the longer you leave it, the yummier it tastes!
At your next BBQ, cook up this macaroni salad and everyone will be gossiping about it all night long!
Macaroni Salad
Yield: 4-6 servings
INGREDIENTS:
2 cups dry macaroni
1 celery stalk, small dice
1/2 red pepper, small dice
2 tbsp red onion, very small dice
Dressing
1/2 cup mayo
2 tsp mustard
1 tbsp white vinegar
Paprika, sprinkle
Salt/Pepper, to taste
DIRECTIONS:
1. In a small bowl, mix together all the dressing ingredients, set aside.
2. Place all the cut up vegetables into a large bowl.
3. Boil up the macaroni until cooked. Drain and place hot macaroni noodles on top of the veggies. Mix in half the dressing onto the hot pasta. Let cool at room temperature.
4. Once cooled, mix in the rest of the dressing and place in refrigerator for a few hours. Enjoy!
