Latke Caprese

This year, I decided to do latke week on my Instagram page. Every weekday this week, I posted a new topping to make your latkes unique and interesting.

By far, this one is my favourite. It is a caprese salad on top of a latke, hence, Latke Caprese. The best part is the balsamic drizzle on top.

Give this a try, it is so simple to assemble but so elegant on your table. This latke is worth gossiping about!

Latke Caprese

Yeild: 20 latkes

INGREDIENTS:
10 small bocconcini cheese, cut in half
10 cherry tomatoes, thinly sliced
10 basil leaves, chopped
Balsamic syrup, drizzle
Sea salt, sprinkle (optional)
20 classic latkes

DIRECTIONS:
1. Make your classic latkes and set aside to cool. Here is my recipe https://www.theyummyyenta.com/blog/classic-latkes
2. On a serving platter, place each latke flat on the plate.
3. On each latke, place some basil leaves, half a bocconcini cheese and a small cherry tomato slice.
4. Drizzle with balsamic syrup and sprinkle with sea salt. Enjoy!
