Goat Cheese Crostini
Who doesn’t love goat cheese… well, ok, fine, I know some people that don’t but that ain’t me. I LOVE goat cheese. And if you know me by now, you know I LOVE balsamic syrup. I put that stuff on anything I can. So, I thought let’s combine the two, in a yummy appetizer, with fruit and granola… can’t go wrong with that!
The simplicity of this recipe makes it attainable for anyone to create but the wow factor is super high. Bring this platter of adorable, flavourful crostini out to your guests and you will have an appetizer worth gossiping about all night long… and maybe even the next morning.
Goat Cheese and Fruit Crostini
Yield: 12 Crostinis
INGREDIENTS:
1 French baguette, sliced
1/2 cup goat cheese
2 plums, thinly sliced
12 blackberries, sliced in half
1 tbsp fresh mint, chopped
1/4 cup granola
Drizzle balsamic glaze
DIRECTIONS:
In a toaster oven, toast up the sliced baguette until lightly golden and crusty.
Remove from toaster and spread about 1/2 tbsp of goat cheese on each slice.
Place plums and blackberries on top of the goat cheese, alternating between the two toppings.
Place the crostinis on a platter.
Scatter granola and mint on top and around the crostinis and platter.
Drizzle entire platter with balsamic glaze. Enjoy!
