Balsamic Brussel Sprouts
Sometimes you need a healthy side dish to cut through all the heavy food over the holidays. You also need a side that will make you feel good for eating it. We all need that balance. I served this side with some fresh salmon, a perfectly healthy meal that you will not feel guilty eating!
Brussel sprouts have a bad rap. Growing up, I would shudder at the mention of these tiny cabbages. But as I got older, and my palate more adventurous- I gave it a try. I do believe Bobby Flay was cooking up a batch of brussel sprouts on one of his shows, and it looked so delicious, I decided to give it a whirl. Surprisingly, they were fantastic! If you like cabbage than there is zero reason to hate brussel sprouts. And to make matters even better- when you roast them or caramelize them, with other flavours and sauces- they taste yummy!
So here, my friends, is a healthy, guilt-free dish worth gossiping about!
Balsamic Brussel Sprouts
Yield: 4 servings
INGREDIENTS:
2 cups brussel sprouts, halved
2 tbsp olive oil
1/4 cup balsamic vinegar
1 tsp sugar
Salt/pepper, to taste
1/4 cup walnuts, roasted and chopped
2 tbsp dried cranberries
2 tbsp feta, crumbled
2 tbsp microgreens (optional)
Drizzle balsamic syrup (optional)
DIRECTIONS:
1. In a large pan, place the olive oil. Once hot, add in the brussel sprouts and saute until they start to soften.
2. Add in the salt and pepper, sugar and balsamic vinegar.
3. Continue to saute until brussel sprouts are caramelized and soft.
4. Remove from heat and mix in the walnuts, cranberries and feta.
5. Garnish with microgreens and drizzle with balsamic glaze. Enjoy!
